The unique microclimate of Plomari naturally yields top-tier oil with consistent 0.3% acidity (proven by lab analysis), so we have no reason to blend. Sourced from 4 select producers with 8 years of proven consistency. Every time you order Memilon, you can be certain it will be exactly like the last time—it is always the same olives, from the same groves, with the same top-tier quality every year. 0.3% ACIDITY & HIGH PHENOLS: Selected via strict lab analysis and blind sommelier tests; we strictly reject any oil over 0.4% acidity.
